2 cups sun-dried tomatoes, soaked
4 plum tomatoes, seeded and chopped
12 cherry tomatoes
4 cloves of garlic (start with 2)
½ teaspoon sea salt (optional)
1 tablespoon chopped shallot
3 tablespoons olive oil (substitute with water from the soaked sun-dried tomatoes)
2 tablespoons maple syrup (optional)
½ teaspoon lemon juice
8 basil leaves (more or less)
2 tablespoons fresh oregano (or a handful)
1½ teaspoon fresh thyme (or half a handful)
Process the sun-dried tomatoes until they are in small pieces.
Add the plum tomatoes, cherry tomatoes, garlic, shallot, water and lemon juice. (As well as the oil, salt and maple syrup, if opted.)
Process to your desired consistency.
Add the herbs and pulse until all are chopped.
Enjoy with courgetti.
