Plan ahead by freezing 1½ cups of banana chunks. This recipe makes 2 servings.
2 cups water
½ cup hazelnuts
6 small dried figs
1½ cups frozen banana chunks
½ vanilla bean, scraped
dash sea salt
Place water and hazelnuts in a blender until the nuts are broken down. Strain the liquid through a nut milk bag, and then return hazelnut milk to the blender and add the remaining ingredients. Blend until smooth and serve immediately.
(I would start with less than 6 figs and adjust along the way as it can be very sweet. For a deeper vanilla flavour, use a whole vanilla bean or two.)
