Two hours of soaking; eight to fourteen hours of fermenting; twelve hours of chilling. The process and the wait is worth it.

And once it has chilled long enough, put the kettle on, plate your accompaniments with a portion of cheese, and enjoy. You’ll soon have to make another batch as it will disappear before you realise it.
